Dear pinelle, today, I’m taking you into the kitchen with Mia and I! We have great fun cooking together, and you often ask me for recipes… so don your pretty aprons and let’s begin with a recipe I “pinched” from the owner of Trattoria Due Ponti: jam tart!!! It’s yeast free but I promise you it is really delish and doesn’t bloat!!! Here’s what you do:
Put 400 g of flour, we often use the wholewheat or kamut kind, 2 whole eggs and 2 egg yolks, 200 g of sugar and 200 g of butter all into a large bowl. Then add a generous bit of lemon zest! Mix it all well together! It will seem a bit floury and stiff… but that’s normal… No need to panic!
Using your hands, start to bring it all together into a dough on the worktop. First, however, sprinkle a little flour on the surface otherwise it will just stick! Mia helped me do this part too and we had lots of fun!!!
When you’ve made the pastry, take a baking sheet and grease it with a little butter (a very thin layer!). Roll out the pastry very thinly on the sheet, with the edges a little raised. Make sure it is thin so the pastry will be nice and crispy once baked!
Then spread a layer of your favourite jam using a spoon and start to make strips with the remaining pastry. Ours were all a bit crooked because it’s not so easy really, but it’s a lot of fun you’ll see! I always stick on the missing bits here and there … ahahhah!!! Now the tart is ready to go in the oven, at 180 degrees for half an hour precisely and voilà.. your jam tart is ready!!!!! Bon appetit!! 🙂
